Old Time Oktoberfest On October 6, we celebrated an Old Time Oktoberfest in a lovely old home near Rice in Houston. The menu was inspired by traditional German food, but was served with condiments and sides the way they used to be prepared--fermented. Fermentation is an ancient technology that uses bacteria to preserve food. It was the standard way of making sauerkraut, mustard, ketchup, etc. before canning came about.
